Peanut Butter Pizza

Yes, you read that right. Peanut Butter Pizza is here!

Do you like pizza? Do you like peanut butter?! Then you will LOVE this peanut butter pizza! This pizza came to me when I was really craving some asian food, and, well… peanut butter. I also happened to have pizza dough in the fridge. What started out as an experiment in my kitchen has become a family favorite, and I hope it will be a favorite of yours as well!

I used store-bought Trader Joes pizza crust for this recipe. I find that it always works, and is easy to work with. This makes for a pretty fast dinner for me, but please make your own dough if you please! There’s nothing better than home-made dough! I find that a thinner crust works for this recipe best, but if you like thick- go with thick! You can’t really go wrong with this recipe because the toppings are absolutely scrumptious!

I top it with peanut butter, an extremely savory fried tofu, pickles, red onions, jalapeños, a drizzle of Sriracha, and cashew parmesan! It may seem like a lot of ingredients and process, but it is actually quite easy and enjoyable to make. You have to press the tofu, so that gives you some time to prepare your toppings and make my Vegan Cashew Parmesan. The cashew parmesan is optional as this pizza is already pretty nutty. You could also just sprinkle a little nutritional yeast on top for a light “cheese” flavor.

This is a really fun pizza to make! I highly recommend making it for a date night, a pizza party, or with your kids. The ingredients are somewhat new and fresh, and can be fun to play around with.

I also have to add that this tofu is also amazing in a lettuce cup or served over rice. Sometimes I eat a few bites out of the pan because it is just so yummy.

Okay! Finally, here is the recipe. I’ll first share the tofu topping recipe and then the super simple pizza assembly instructions. I recommend starting with pressing your tofu, then preheating the oven, making my Vegan Cashew Parmesan, and prepping the rest of the ingredients. This makes for a pretty streamlined process.

Tofu Topping Ingredients:

  • 14 oz. of extra firm tofu
  • 2 Tbs. of peanut oil (or other neutral oil)
  • 8 cloves of garlic minced
  • 1/2 inch of ginger minced
  • 1 green onion chopped
  • 1 Tbs toasted sesame oil
  • 2 Tbs. soy sauce
  • 1 Tbs. rice wine vinegar
  • 1 tsp. no-chicken bouillon base
  • 1 tsp. sugar
  • 1/2 tsp. cumin
  • 1/4 tsp. cinnamon
  • 1/2 tsp. black pepper

Tofu Topping Method:

  • First things first, press your tofu. If you have a tofu press, great! I don’t. I just place my tofu on a plate, put a piece of paper towel on top, and place a heavy cast iron skillet on top. This drains any extra water from the tofu. I do this for about 15-20 minutes.
  • While this is happening I rest the dough on the counter and prep all of my other ingredients. Once you get the tofu frying up, this pizza doesn’t take long! Go ahead and get your oven preheated (pre-heat to your pizza dough recommendations), make your cashew parmesan, and prep all of your other toppings!
  • After about 15-20 minutes your tofu should have drained a good amount of water. Put your oil in a non-stick pan and get it heated. Once the oil moves freely around the pan, you’re ready to go. Pat the tofu dry and place the blocks directly into the pan. I use a potato masher to “crumble” the tofu while it gets frying in the pan. You could also use the back of a wooden spoon- it just might take a few more minutes. We are aiming for a ground meat type of texture here.
  • While the tofu keeps frying, add in your garlic and ginger. Let that cook for a minute or two. Then add in the rest of the ingredients. You can do this slowly- no rush. The more you add in the ingredients the tofu will continue to brown and incorporate. I’d say this whole process takes about ten minutes.
  • When your tofu looks nice and brown and cooked it’s ready to add to your pizza!

Peanut Butter Pizza Ingredients:

  • prepared pizza dough (I got Trader Joes brand)
  • 1/2 cup of smooth salted peanut butter
  • prepared tofu
  • 1 thinly sliced kosher dill pickle
  • 1 thinly sliced jalapeno
  • “some” thinly sliced red onion (I used roughly an 1/8 cup)
  • Sriracha drizzle
  • “some” cashew parmesan ( I used about 1/4 cup)
  • cilantro (optional)

Peanut Butter Pizza Method:

  • Hopefully you have your oven preheated (preheated to your pizza dough recommendations). Go ahead and take your prepared dough and set it up on your pan. I used a pizza “cripser” pan. You could also use a pizza stone or regular baking sheet. I usually grease my pan and pizza dough with a little olive oil for extra crispiness, but this is optional!
  • Start topping your pizza. First put on your layer of peanut butter and spread evenly. Then add your tofu, pickles, jalapeños, pickles, and red onions.
  • Pop in the oven and bake per your pizza dough guidelines! For my Trader Joe’s pizza crust I baked my pizza at 425° F for 14 minutes. Take it out, and top!
  • Drizzle with the Sriracha and the Vegan Cashew Parmesan. (Or parmesan of choice)
  • Finally I topped mine with a bit of chopped cilantro for garnish. If you have some handy- it doesn’t hurt! And that’s it! Enjoy!

Although it may seem like there is a lot going on here with this pizza, it is actually super simple! I find that I am done with the whole process in less than an hour, and that includes the bake time and pressing the tofu!! This leaves me a little breathing room to multi-task, do some dishes, or maybe even have a glass of wine! Cheers! Please let me know how you liked the pizza in the comments below!
