Seared Bok Choy with Crispy Mushrooms

Yum! Hello, and yum! Oh, and did I say yum! This recipe is bomb, if I do say so myself. It is rich, savory, and garlicky- basically a recipe of dreams. You’re welcome.

I am a big lover of bok choy. I love how juicy and tasty it is, but it also has loads of health benefits! It is super rich in Vitamin A and Vitamin C, has loads of anti-inflammatory properties, and has an abundance of iron, magnesium, and folate! I sauté the white button mushrooms in olive oil with garlic until nice and crispy, and then set them aside. In the same pan, I sear the bok choy with more garlic and ginger, then drizzle it will toasted sesame oil and soy sauce. I cook it for a few minutes and boom, then top with those crispy mushrooms, and boom! You have an incredibly delicious dinner. The flavors are simple to create, but taste so complex! I cannot get over how delicious it is!

This recipe is rich enough for a main course, and also perfect for a side dish! Eat it alone or on top of some steamed rice or noodles. It does not disappoint!

Ingredients:

  • 8 oz of white button mushrooms thinly sliced
  • 4 Tbs. Olive Oil-divided
  • 12 cloves of garlic- chopped and divided
  • 6.3 oz. of bok choy (roughly) – sliced in half lengthwise
  • 1/2″ of ginger finely chopped
  • 2 Tbs. Soy Sauce
  • 1 tsp toasted sesame oil

Method:

  • Begin by preparing the mushrooms. Wipe them clean with a damp cloth. Do not rinse. This will ensure that they do not retain too much water, and they will get nice and crispy. Slice extra thin.
  • Heat 2 Tbs. of olive oil in a pan over medium/high heat, and begin sautéing the mushrooms. Sauté for about four minutes until most of the liquid has escaped and evaporated from the mushrooms. Then add in about half of the chopped garlic. Keep sautéing until the mushrooms get golden and a little crispy. The whole process should take about 10 minutes.
  • When the mushrooms are nice and crispy set them aside and return to the same pan over medium heat. Add in your finely chopped ginger and the rest of the garlic.
  • Let your garlic and ginger sauté for about a minute, and then add in your bok choy. It should be sliced in half lengthwise. Place your bok choy flat side down.
  • With the bok choy flat side down, drizzle with the 1 tsp. of sesame oil and 2 Tbs. of soy sauce. It should be sizzling. Cover and let fry for about two minutes.
  • Uncover your bok choy, and flip all of the pieces to the other side. Sprinkle with a pinch of salt and freshly ground black pepper. Be careful with the salt depending of what sort of soy sauce you are using. Some are very salty! Cook for just about a minute.
  • Transfer the bok choy to a plate and cover with the crispy mushrooms.
  • Serve and enjoy!
